The drive takes 34 minutes.<\/p>\n<p>It all started in <strong>Selaya<\/strong>, around the 1950s, when the post-war period gave way to a <strong>Spain<\/strong> that was just beginning to be rebuilt. One family ran a humble tavern-shop, which also served as a bar and a store selling basic goods. That tavern meant a lot to everyone, as it was a meeting place, a place of conversation, and a place of life.<\/p>\n<p>Matilde began making her first homemade quesadas, especially for the town festivals. Soon, their flavor won over more people&#039;s palates, as on weekends, visitors from the surrounding area came to shop and also to dance. Next to the <strong>tavern <\/strong>A small dance hall was opened, where the barrel organ played music and the <strong>quesada<\/strong> gave the sweet touch to every celebration.<\/p>\n<h2>The birth of the sobao pasiego<\/h2>\n<p>What had begun as a <strong>homemade dessert<\/strong> for parties and weddings, was increasingly gaining popularity since in the late 60s, Matilde and Gumersindo began to also make <strong data-start=\"1779\" data-end=\"1789\">sobaos<\/strong>, first in the village bakery, and then in a small oven of their own, selling them directly from the shop.<\/p>\n<p data-start=\"1907\" data-end=\"2138\">Already in the 70s, with the purchase of the first kneading machine, the old wedding hall became a <strong data-start=\"2015\" data-end=\"2026\">workshop<\/strong>The space that once held dances and toasts was filled with the aroma of butter and freshly baked dough.<\/p>\n<p>Currently, they are still being developed <strong data-start=\"2555\" data-end=\"2576\">sobaos and quesadas<\/strong> With the same recipe as always, with the same care and respect for the ingredients.
